					<description>It might not be be what you ate in Florence but it sounds worth a try in my kitchen.  what do you recommend for the vinegar?  I'm guessing apple would be too mild, so red wine vinegar?  white wine vinegar?  Something else?</description>

					<description>Red wine here, apple in the USA.  Mine needs to be stronger, for sure.  It's homemade and mild with a winy note.  It's great on salads, but I wanted it stronger for this dish.

The next trial will be slightly more complicated and require making a tomato sauce Sarda style.  Try this and report back!</description>

					<description>Sounds like a wonderful dish. You are like the Italian recipe scientist! My grandmother used to do a simple vinegared dish with beef or pork and onions. It was not served hot, even cold. Wow, I had forgotten all about that until now. I wonder what it was called?</description>
