Where exactly do you live in Umbria?

I am at Città di Castello, waaay up the E45. We have lots of wild foods up here.

What is it? Blackberry syrup? And what do you have planned for it?

It’s from a British preserving book and I am just getting acquainted with it. They call it a vinegar, but it is way too sweet for that. A fruit sauce, I think. Can be used in marinades, over cheesem fruit, whatever. I am going to make another batch with much less sugar, then I will publish both versions here.

Paola has spoken. She came this morning and tasted it on cake and loved it. I told you it was too sweet!

That’s technically a vinegar? Fascinating. So it’s been slightly fermented?

How about adding it to muffin dough?
