and me, too. Every time I read some of this site I learn something.

Cheese is a constant companion in my Italian kitchen. I can’t find all of the 463 Italian cheeses in my city, and you won’t find them all, either, but that site will help you know what to do with what you find.
A favorite quick meal for me is one of the several Italian cheeses made for cooking just melted until browned on the edges and eaten with a fork and a salad. That’s Italian grilled cheese, and is beautiful with potatoes or bread if you aren’t on a diet. Little Tomino cheeses fried in olive oil are a way to coddle a vegetarian at a carnivorous meal.

I’m making the potato, pecorino and porri one for Christmas! The leek supply may disappear… How’s opera these days? Who can afford those tix, I wonder?
